How to make meatloaf

  1. Heat the oven to 350°F (175°C).
  2. Mix the ground meat with breadcrumbs, egg, milk, chopped onion and seasoning. Mix gently with your hands until just combined; overmixing makes it dense.
  3. Shape it into a loaf on a lined baking sheet, or press it lightly into a loaf pan.
  4. Spread on the glaze (ketchup, brown sugar and a little vinegar is the classic).
  5. Start the timer and bake.
  6. When it reaches 160°F (71°C) in the middle, take it out and rest it for 10 minutes so it slices cleanly.

A loaf shaped on a baking sheet cooks a little faster than one in a loaf pan, and gets more crust.

Meatloaf and baked potatoes together

Both bake at 350°F, so they can share the oven. Medium potatoes need about 1 hour 10 minutes and a 2 lb meatloaf about 1 hour, so put the potatoes in about 10 minutes before the meatloaf and both come out together.

Questions

About 1 hour to 1 hour 15 minutes, until it reaches 160°F (71°C) in the middle.

How do you know when meatloaf is done?

Use a thermometer in the thickest part: 160°F (71°C) for beef or pork, 165°F (74°C) for turkey or chicken. Clear juices are a hint, not proof.

Yes. A 2 lb loaf takes about 50 minutes to 1 hour at 375°F (190°C). Check the temperature, not just the clock.
