Broccoli timer: how long to steam, boil or roast broccoli

Steam broccoli florets for 5 to 6 minutes, until bright green and just tender. Boiling takes 2 to 3 minutes, and roasting at 425°F takes 20 to 25.

Cut the broccoli into florets of about the same size so they cook evenly. The stem is good too: peel it and slice it thin.

Steaming

Bring about an inch of water to a boil in a pot, set the florets in a steamer basket above the water, cover, and start the timer. Start 5 min

Check with a knife: it should go into the stem with a little resistance. Add a minute for softer broccoli.

Boiling

Drop the florets into a large pot of boiling salted water and start the timer. Start 3 min Drain straight away. For broccoli to serve later or add to a salad, move it into ice water to stop the cooking.

Roasting

Heat the oven to 425°F (220°C). Toss the florets with olive oil and salt, spread them out on a baking sheet, and roast 20 to 25 minutes, tossing partway, until the edges are brown and crisp. The timer buzzes at 12 minutes so you can toss. Start 22 min, buzzes to toss

Other vegetables

Times are for boiling, counted from when the vegetables go into boiling water.

Making a whole dinner?

Vegetables are the quickest part of the meal. Start the meat or potatoes first, give each its own named timer, and put the broccoli on near the end. Run several timers at once

Questions

How long to steam broccoli?

5 to 6 minutes for florets, with the lid on, once the water is boiling.

How do you know when broccoli is done?

It turns bright green and a knife goes into the stem with a little resistance. If it goes dull olive green, it is overcooked.

Is it better to steam or boil broccoli?

Both work. Steaming keeps it a little firmer and less watery; boiling is faster.
