New Year's Eve dinner: tenderloin and lobster, ready together
Serves 4. Surf and turf at one oven temperature, 425°F (220°C). The beef roasts first; the lobster tails and asparagus go in while it rests, so everything is ready at once.
Two starts run the evening: Add "Beef tenderloin (2 lb)" to Kitchen Timer and start it when the beef goes in, then Add "New Year's Eve dinner" to Kitchen Timer and tap Start all when it comes out. The second button holds the rest, the lobster and the asparagus, three timers of 15 minutes that tell you when each goes in, so they all finish together 15 minutes after you tap Start all.
How to start: tap a button on this page, then Add. A meal goes to Meals: tap Load, then Start all on the board. A single timer goes to Presets: tap Start. The clock times below count from the moment you tap Start, not from when you open the link. If a timer stops and waits at a step, tap ✓ when you have done it: the next step counts from your tap, so a late tap moves that dish later.

Schedule for dinner at 8:00 pm

How long to boil lobster tails
Bring a large pot of salted water to a boil, add the tails, and start the timer when the water boils again. Allow 1 minute per ounce: 6 minutes for 6 oz tails, 8 minutes for 8 oz tails. They are done when the shell is bright red and the meat is opaque, 145°F (63°C). Add 6 min Add 8 min (then Start in Presets)
New Year's Day: black-eyed peas and collard greens
Both simmer for about the same time, so start them together.
- Black-eyed peas: soak dried peas overnight, then simmer in fresh water or stock for 45 minutes to 1 hour, until tender. Unsoaked dried peas take 1 to 1½ hours. Canned peas only need 10 minutes to heat through.
- Collard greens: remove the thick stems, slice the leaves, and simmer in stock with smoked turkey or a ham hock for 45 minutes to 1 hour, until tender. For very soft, Southern-style greens, keep going up to 2 hours.
Add "New Year's Day" to Kitchen Timer Load it from Meals and tap Start all.
